Palm Coast’s IMBing Lounge Celebrated One Year in Business With Heritage Menu, Artist Showcase, and Eyes on the Future

The IMBing Lounge, a specialty café and community gathering spot in Palm Coast, marked its first anniversary this month, with its official birthday falling on May 8, 2026. Owner Megan — a Filipino native whose neighbors have become her most loyal customers — reflected on a year of slow, steady growth and shared what she hopes the next year will bring.

The lounge held a soft launch on May 3, 2025, but May 8 is recognized as the true opening date. In the year since, the café has built a loyal base of regulars who come daily or weekly to enjoy its specialty menu, which includes homemade sausage, French macaroons, and a rotating selection of food and drinks that set it apart from standard coffee shops. “My neighbors are my customers,” Megan said. “It kind of grew into a growing group of family and friends.”

To celebrate the anniversary, the IMBing Lounge spent the week showcasing dishes tied to the cultural backgrounds of each team member, with Megan preparing Filipino staples — chicken adobo and pork barbecue. A Polish kielbasa and cabbage dish was on the schedule for the following day. Looking ahead, Megan said she is planning a by-invitation-only prime rib dinner for the customers who supported the business through its first year. Attendance requires a prepaid reservation along with the invitation.

Megan said one of the most meaningful parts of the past year has been watching her team develop. Several of her staff members are high school or college students, and she said teaching them the business has been a priority alongside serving customers. “I have a lot of team members who are either high school or college students and also housewives,” she said. Three of her high school employees are graduating this year and heading to college, which she said she will feel. “I’m going to miss them,” Megan said.

On the community side, the IMBing Lounge hosts a free monthly artist showcase, giving local artists a full day to display and sell their work. Megan said she handles the advertising at no cost, takes no commission on sales, and plans to continue the program through year two. “There are a lot of artists in Palm Coast,” she said. “I want this to continue to be a place for the community to come, relax, and enjoy.”

This Month’s Featured Artist

The current artist showcase features Barbara Klein Craig, a Flagler County art pioneer who opened the county’s first art gallery — Klein Art — on the beach in 1981. Craig, who holds a Bachelor of Fine Arts from Illinois Wesleyan and a Master of Arts from Michigan State, specializes in water-based media, including watercolors, acrylics, and gouache. She paints water scenes, marshes, flowers, and natural settings, and also takes private commissions, including pet portraits. Craig said of the IMBing Lounge: “It’s a breath of fresh air in a sea of chaos.” Her show runs through the end of the current display period, with works available for purchase on-site.
